Grape variety: 100% Pinot Noir
Age of the vines: 35 years
The Hautes Côtes de Beaune are planted on a somewhat uneven relief. The vines flourish on a soil of marl and limestone scree
Mode of culture: Reasoned fight.
Harvest: Manual in perforated boxes of 20 kg.
Yield: 40hl/ha
Vinification: Sorting of the harvest then complete destemming then pre-fermentation cold maceration for 5 days at 12°C, fermentation for 10 to 13 days with pumping over and some punching down to improve the extraction, then post fermentation at 25°C for 3 days.
Aging: 50% put in barrels with 10% new barrels and 40% barrels of one or two wines and 50% in stainless steel vats for 12 months. Assembly of the tank and the barrels for bottling.
